Today is the perfect day to try a new restaurant in Lanesboro

In February, I wrote a story about an ice cream shop in Lanesboro that was for sale…

…Labelle’s, at 111 Parkway Avenue North in Lanesboro is for sale. The asking price: $239,900. According to the description of the real estate, “the owner has long been successful in running a business in this location since 1997.” (Read more: Lanesboro, Minnesota, ice cream shop for sale)

And I was blown away to find out it was this story who brought Jordan and Christina Evenson closer to their dream of owning and operating a business. Jordan saw it in the station’s newsletter, sent the link to Christina, and boom. They had their soft opening in May and the grand opening is August 13 (Clara’s birthday).

Tell us about Clara’s Eatery in Lanesboro, MN!

First, the name. In a Filmore County Newspaperstory by Barb Jefferswe learned why two people from Austin, Minnesota decided to buy and run a business in Lanesboro.

Although Jordan and Christina grew up in Austin, Minnesota and lived there happily with their families and both worked in Hormel in careers they enjoyed, the Lanesboro area had always been special to them.

Jordan’s great-grandmother, Clara Evenson, lived in Lanesboro until her death at the age of 102. The name of the restaurant pays homage to Clara.

Now the menu. Pizza (the same pizza recipe as Loubelle’s), paninis, sandwiches, soups, you know, the usj. And of course, ice cream (16 kinds of Chocolate Shoppe ice cream).

Then for the kids…

Glady’s meal (named after Jordan’s grandmother Glady) is a choice of grilled cheese or PB/J. It is accompanied by kettle crisps and fruit or vegetables.

And for hikers, cyclists and motorists…

  • BUNNY PLATE – A selection of seasonal raw vegetables.
  • MONKEY PLATE: A selection of fresh seasonal fruits.
  • PUPPY PLATE: A selection of meats and cheeses.

They even found a way to work in Spring Grove with the Spring Grove Float (choice of Spring Grove Soda with Dutch vanilla ice cream).
