Pflugerville Three Legged Goat wine bar focuses on Texas produce

Pflugerville Three Legged Goat wine bar opened in a small downtown space in November 2018 and has grown steadily since.

The company is the co-creation of Jim McDonald, Marilyn Klassen, Dale “Woody” Woodkey and Chelsea Robertson.

McDonald said the idea started around a 2017 conversation the four had in 2017.

He had just been laid off and each company he was considering applying for required significant travel.

“We started drinking a glass of wine and then discussing ideas to be able to start our own business,” said McDonald. “We searched the city for things that we thought were missing in Pflugerville.”

Ultimately, the group decided to create a mirror image of a Pflugerville-based establishment that they all love, The Growler Bar.

“The Growler Bar has a lot of craft beers with a few wines, so we were like, ‘Well, let’s make a lot of good wines with a few beers. “And that’s really the genesis of it.

After looking at several locations, the group chose a small location at 200 E. Pecan St., Ste. 5.

Although the interior space of the bar may be limited, McDonald’s and the team have invested in an expansive terrace that surrounds its northern end and provides enough space for customers to enjoy wine or beer outside. .

The 2,500 square foot bridge was a strategic decision largely influenced by the COVID-19 pandemic, McDonald said.

“We knew that when the pandemic was over people would feel more comfortable going out,” he said. “And so we went on [with] our outward expansion.

As well as providing patrons with a place to sit and sip drinks outside, the patio also helps facilitate Three Legged Goat’s weekly open mic event every Thursday from 7 p.m. to 10 p.m.

Three Legged Goat focuses only on Texas produce, be it wine or beer, and McDonald’s said the menu is about 50% permanent and 50% rotating.

The group is also considering adding Texas liqueurs to their menu, but McDonald’s said there was no set date for this.

The property has also contacted an urban wine estate in the area to make a limited run of three-legged goat-branded wine, but McDonald’s said there was no specific timeline for that yet either.

“There will be limited availability for whatever we’re working on,” he said.

When it comes to the kind of three-legged goat, McDonald’s and Woodkey said it depends on the customer. People can come for shows if they want, they can have quiet conversations, and they can even bring board games.

“It’s not a shock bar. It’s not a karaoke bar, ”he said. “We have a rule that the music is always at the right level where you can still have a conversation on it.”
