La Salut is a Catalan-inspired vermouth bar that opens in the newly refurbished Norfolk Hotel


A new Catalan-inspired wine bar will open in Redfern this spring by the team behind Love Tilly Devine, Dear Sainte Eloise and Ragazzi. Appearing inside the newly renovated Norfolk House and Hotel on Cleveland Street, La Salut will serve Spanish wines and seafood-based Spanish cuisine.

At the helm of La Salut are Love Tilly’s Matt Swieboda and Nate Hatwell, alongside executive chef and co-owner Scott McComas-Williams (Ragazzi, Fabbrica). The wine bar will take place inside the hotel’s former sports bar and will be furnished in earthy tones and waxed concrete. It will focus on rare Spanish wines and vermouth, with Hatwell describing it as “wine-oriented, but not serious about wine”. Among the drops you can expect to discover is the pestillant-natural wine from Nuria Renown, oxidative whites made from Palomino de Ramiro Ibáñez and wines aged in underground amphorae.

If you get hungry on your journey through these Spanish drinks, you can munch on manchego and anchovies, spicy fried quail, and a dish taken from McComas-Williams’ favorite Barcelona vermouth bar, Morro Fi. with mussels, hot sauce and fries.

As at Ragazzi, the menu changes regularly, the seafood dishes being punctuated by the catch of the day.

McComas-Williams became lyrical about his passion for Catalan snacking culture when we asked him about the inspiration behind his latest culinary adventure. He said: “The cuisine itself is obviously a big part of my heart, but I think it’s just as much the culture of eating and drinking that justifies my obsession. The style of service is perfectly relaxed but so important. for life there. Especially in Barcelona, ​​where vermouth and simple but delicious snacks are a part of life. “

“This place fascinates me because, in the purest Barcelona style, there is no real cuisine”, he explains. “Some of the best bar food in Barcelona is not prepared by chefs but simply prepared by the same old man who will pour your vermouth or top your cerveza. We have also dedicated part of the bar to serving raw seafood. Like slicing section only for ham. “

While the full La Salut experience will only be available by visiting the wine bar, a range of venue wines will be available for purchase throughout the Norfolk House and Hotel, and at take home to taste via the Norfolk Bottle Shop.

The 40-seat venue is a collaboration between the Love Tilly Group and the new hotel and accommodation group The People_ which was behind the transformation of Norfolk House and Hotel. The historic pub underwent a huge renovation and was set to reopen with two bars, a sprawling outdoor courtyard, a new barbecue-focused menu and accommodation in July before Sydney’s lockdown. Now, he’s set to open his doors to the public once the state hits 70% double vaccination – with La Salut expected to follow him soon after.

This will be a fantastic addition to the ever-growing range of good food settling in the Inner West, something Scott McComas-Williams is also very enthusiastic about.

“I’m very excited about this too, being a man of the Inner West myself,” he told us. “I’ve always wanted to do something around these traps. The space is a great vibe for a vermouth bar and has a little more natural light than our other places … Come hang out with your friends on a Saturday lunchtime or bring your date and sit at the bar on a school night. Your parents will love it too. It really is a place for everyone. “
