Coplay Eatery gears up for opening – Times News Online

The highly anticipated Coplay Eatery, 1214 Chestnut St., is about to open. It is expected that the restaurant will welcome customers by the end of September or the beginning of October.

Supply chain challenges have delayed the opening, initially scheduled for the summer.

The property has a rich and interesting history. Originally, the building was an ARCO gas station. There was a time when there were five gas stations – ARCO, Kunkle’s, Ressler’s, Blose’s Esso, and Santee’s – in the small 0.6 square mile borough of Coplay.

These gas stations have all disappeared. Coplay’s only gas station is now located in Giant.

After the gas station days, the property has been renovated and reopened as Sal’s restaurant. Sal operated the restaurant and then sold it to Tony Cross.

The name of the restaurant has been changed to Tony’s Restaurant. Cross was a gracious and beloved figure of Coplay who had built up a lucrative senior clientele and catering for house parties.

As Cross’s restaurant career came to an end with his retirement, he sold the restaurant to Paul Cottone, who took over operations and quickly named the location Paulie’s Restaurant.

Cross and Cottone were both civic-minded and financially supported a number of community events.

Paulie’s restaurant was very successful until the pandemic hit. Not having a drive-thru option or delivery capability forced Cottone to close the doors.

Enter co-owners Patrick Sibri and Edith Garcia – and the Coplay Eatery. The new owners are planning a menu of American dishes with a small selection of Mexican dishes. They plan to be open for breakfast, lunch and dinner.

A popular spot for residents and other groups who have met there for decades, the buzz around town is that the people of Coplay are worried about the restaurant’s re-emergence.
